Roasted Sweet Potatoes with Dark & Stormy Marmalade & Balsamic Glaze.

Our Dark & Stormy Marmalade is produced with Blood Oranges, Ginger, Lime & The Duppy Share Caribbean Rum.

Here's what you'll need:

  • 2 sweet potato, peeled and cut into cubes

  • 30ml olive oil

  • 60ml honey

  • 75ml balsamic vinegar

  • 75g marmalade

  • 1/3 tsp ginger

  • salt & black pepper


  1. Lay the sweet potatoes out in a single layer on a roasting tray. Drizzle the oil, salt and pepper over the potatoes. Roast for 25 to 30 minutes in oven or until tender.

  2. In a saucepan reduce the vinegar by half, then add honey, dark & stormy marmalade and ginger. Stir to combine.

  3. When potatoes are roasted, remove and toss to coat with marmalade mixture.
