We have to thank Instagram follower 'Jes' for this cheesecakes name as 'Chocolate Orange Cheesecake with Negroni Marmalade Glaze' was far too long.
I can't explain how rich this cheesecake was, I'm talking oligarch levels of wealth. We teamed up with the wonderful Gower Cottage to create this however you could use an alternative chocolate spread.
Our Negroni Marmalade is produced with Blood Oranges, Gin, Campari & Martini Rosso.
Here's what you'll need:
300 grams ginger nut biscuits
100 grams soft salted butter
400 grams chocolate spread (we used Gower Cottage Orange Brownie Butter)
1/2 tin of mandarins
500 grams cream cheese (at room temperature)
120 grams Negroni Marmalade
1/2 medium orange (juiced)
Crush the biscuits into the bowl of of a food processor and pulse until you have a smooth sandy mixture. Gently melt your butter and add it to biscuit mix. Tip into a 9inch round spring form tin and flatten with the back of a spoon. Place in the fridge to chill.
Mix your cream cheese and chocolate spread together. I personally warm my chocolate spread in the microwave so that its easier to mix with the cream cheese.
Add your cream cheese and chocolate mix to the ginger nut biscuit base. Cover with clingfilm and put it in the fridge for at least 6 hours, I personally choose over night.
For the glaze, mix together the negroni marmalade and orange juice and warm in a pan over lower heat until you create your glaze. Decorate your cheesecake with the mandarin segments and pour over your glaze.
Serve to lovers and loved ones and bask in the eternal glory of making this incredible dish.
