ingredients
- Tofu x 300g
- Udon Noodles x 100g
- Olive Oil (for frying)
- Spiced Carrot Chutney
- Carrot x 1
- Red Onion x 1
- Spring Onion x 2
- Red Chillies x 2
- Nigella Seeds x 1
- Coriander
- Salt
- Lime
STEP ONE:
Add a small amount of olive oil and fry the tofu in a pan until golden brown. In a separate pan boil the noodles.
STEP TWO:
Drain the noodles and combine them into the pan with the tofu. Apply generous amount of Spiced Carrot Chutney, warm through and serve.
STEP THREE:
For the salad: Slice the red onion, spring onion, red chillies and add the carrot, grated. Mix well with a handful of coriander, nigella seeds and a good squeeze of fresh lime.
