Rainbow Salad with Negroni Dressing

  • Asparagus x 6
  • Red Chillies x 2 
  • Red Cabbage x 1 
  • Red Onion x 2
  • Cherry Tomatoes x 8 
  • Limes x 2 
  • Coriander 
  • Spring Onions x 6
  • Carrots x 4 
  • Papaya x 1 
  • Tofu x 200g 
  • Turmeric x 1 teaspoon 
  • Olive Oil x 2 teaspoons (and more for frying) 
  • Negroni Marmalade x 2 tablespoons  


    Place a pan with a drizzle of olive oil over a medium heat. Crumble in the tofu and mix in 1 tablespoon of Negroni Marmalade, turmeric, salt and pepper until cooked through. Leave to cool and prepare the rainbow salad by slicing and grating the coriander, red onions, red cabbage, asparagus, cherry tomatoes and papaya. Mix 1 tablespoon of Negroni Marmalade with 2 teaspoons of olive oil and drizzle over the top.
