Grilled Steak with Tutti Frutti Herb Brush

Rating: Medium

  • Steak x 1
  • Salted Butter x 50g
  • New Potatoes x 200g
  • Manchego Cheese x 100g
  • Large Romano Peppers x 2
  • Salt
  • Pepper

Herb Brush

Wrap the new potatoes in tin foil and add 20g of butter and a good pinch of salt and place in the coals of the barbecue and cook for 10minutes. Remove the steak from the fridge and bring to room temperature. We recommend a bone-in steak such as a Côte De Boeuf. Season both sides with salt and pepper. Place on the barbecue grill over a medium-high heat and add a large cube of butter on top of the steak.

Tie the fresh herbs together with string or twine. In a heatproof dish or cast-iron pan warm the Tutti Frutti Jam alongside the steak on the grill. Use the herb brush to lather the Tutti Frutti Jam over the steak so that the flavours of the herbs infuse with the sweet Tutti Frutti Jam. Turn the steak over and repeat.

When the steak is cooked to your liking remove from the barbecue and serve with the new potatoes, grilled Romano peppers and Manchego cheese.
