Drunk French Toast Bagels

  • Eggs x 3 
  • Whole milk x 6 tablespoons 
  • Caster sugar x 1 tablespoon 
  • Vanilla extract x 1 teaspoon 
  • Cinnamon x 1 teaspoon 
  • Nutmeg x 1 teaspoon 
  • Coffee Liqueur x 2 tablespoons 
  • Bagels x 3 (halved)
  • Salted Butter (for frying) 
  • Maple Syrup 
  • Raspberries 
  • Icing Sugar  
  • Espresso Martini Marmalade x 2 tablespoons 


    Whisk the eggs, whole milk, caster sugar, vanilla extract, cinnamon, nutmeg and coffee liqueur together and pour into a large flat dish or tray that the 6 bagel halves will fit in a single layer. Add the bagels and turn them around in the mixture. Leave for 5 minutes, turning now and again so they soak up the French toast mix.


    Heat a large non-stick frying pan and add a knob of butter and fry the bagels until golden brown and crisp on both sides. Combine maple syrup and butter and spread onto the bagels. Heat the Espresso Martini Marmalade in a non-stick pan and pour over the bagel stack. Serve with raspberries and a dusting of icing sugar.
