Cracking Plum & Cranberry Jam Cinnamon Rolls

  • Strong white bread flour (plus extra for dusting) x 600g 
  • Dried active yeast x 14g 
  • Caster sugar x 75g
  • Unsalted butter x 90g 
  • Full fat milk x 275ml 
  • vanilla extract x 1 teaspoon 
  • large egg x 1 
  • olive oil (to line bowl with) 
  • icing sugar x 20g 
  • water x 4 teaspoons 
  • cinnamon x 1 teaspoon 
  • light brown sugar x 50g 
  • caster sugar x 2 tablespoons 
  • salted butter x 40g (melted) 
  • Cracking Plum & Cranberry Jam x 45g (plus extra to serve)  


    Sift the flour into a large bowl, and add the caster sugar and yeast. Rub the butter into the mixture so it resembles bread crumbs. Gently heat the milk until warm. Add the warm milk, vanilla, and egg to the dry ingredients. Knead the dough together for 10 minutes. Once kneaded, it will be springy to touch, and no longer sticky. Transfer into a lightly oiled bowl, and cover the top of the bowl with cling film. Let it rise for 1 hour until doubled in size.


    Once the dough has risen, transfer to a lightly floured work surface, and roll out to a large rectangle. Gently brush the surface with melted butter. Mix together the cinnamon filling ingredients and then gently layer both this mixture and the Cracking Plumb & Cranberry Jam evenly. Roll the dough from long side to long side, Cut this evenly into pieces. Arrange in a large skillet pan or oven safe tray.


    Cook for 15 minutes until the dough has risen and is golden in appearance. Mix the icing sugar and water and coat the cinnamon tear and share. Add more Cracking Plumb & Cranberry Jam on top to serve.
